On arrival at our workshop, the fish is graded by size and its content of valuable fats rich in Omega-3 and Omega-6, essential to physical and mental wellbeing. Only the finest cuts are selected for ageing and entrusted to skilled artisans who pass their knowledge from generation to generation.

A Tradition Rooted in the Renaissance

In the 1400 , in the historic Florence Salt Bank, the first salumi di mare were already being made. We have perfected this ancient tradition, using pure Volterra salt and maintaining the salting by hand, essential to ensure optimal product quality and preservation.

Slow ageing, high nutritional value

During ageing — which can last over 5 months for the Bresaola and over 10 months for tuna ham the product loses up to 70 – 75 % of its starting weight, concentrating flavours, texture and nutritional value. The final result is a cured speciality with over 35 % protein, light, digestible and perfect for athletes and balanced diets.

Delicate smoking, 100% Italian

Some of our cured specialities are smoked using an entirely Italian artisan technique and a selected blend of Natural wood In particular beech gathered in the forests of the Pistoia Apennines — for a delicate, enveloping aroma.

A Tradition Rooted in the Renaissance

As early as the 15th century, in Florence’s historic Salt Bank, the first sea salumi were already being crafted. We’ve perfected this ancient practice by using pure Volterra salt and maintaining a hand-salting method, essential for quality and preservation.

Long Aging, High Nutritional Value

Our products undergo a slow aging process — over 5 months for Bresaola and over 10 months for Tuna Prosciutto — during which they lose 70–75% of their original weight, resulting in concentrated flavor and superior nutritional value. The final product contains more than 35% protein, making it ideal for athletes, fitness enthusiasts, and healthy diets.

Delicate Smoking, 100% Made in Italy

Some of our salumi are gently smoked using a traditional Italian method with natural woods, primarily beech harvested from the Pistoia Apennines. This creates a refined and aromatic flavor without overpowering the product.
